Peanut Butter Cookies

Let me say straight off that these peanut butter cookies are delicious, they are one of the tastiest cookies I’ve made in a long time. So, I really do recommend you giving these a bake when you have a spare 30 minutes, as they just take 10 minutes in the oven, and are just lovely. This recipe is from Gwyneth Paltrow’s cookbook, Notes From My Kitchen Table, which I haven’t had much use of so far, but contains a  couple of dishes I fancy whipping up. I’ve altered it a little, as the quantities were a little much for me, but this one made around a dozen of these little treats.

75g plain flour
1/4 teaspoon bicarbonate of soda
1/4 teaspoon baking powder
1/4 teaspoon salt
65g unsalted butter, softened
85g smooth peanut butter
65g dark brown sugar
65g light brown sugar
1 medium egg
1/2 teaspoon vanilla extract
25g granulated sugar

Preheat the oven to 180 degrees celcius.

Whisk together the flour, bicarbonate of soda, baking powder and salt in a medium bowl. In a separate bowl, cream together the butter, peanut butter and brown sugars. Stir in the egg and vanilla. Add the flour mixture in three  batches and stir until smooth. Roll the mixture into golfball sized balls, roll in the granulated sugar, and place on baking trays covered with parchment paper. Bake for 10 minutes, until golden brown, and then leave to cool on a rack.
