Chocolate & Macadamia Cookies

Whenever I pop into a grocery store that has recipe cards on display, I inevitably pick up a couple each time, always intending to cook whatever it is on the front. However, usually they just end up stuck to my fridge, as I have so many recipe books and not enough time to cook them all. This weekend was different though – I took down all the recipe cards and went through them, determined to pick out something to try, and these chocolate and macadamia nut cookies. They are absolutely delicious and their melt-in-the-mouth texture is just dreamy. Enjoy these little beauties with a hot cup of tea, and you won’t regret it! This recipe makes between 14 and 16 little cookies.

115g unsalted butter, softened
60g icing sugar, sifted
100g plain flour
20g cocoa powder
1/2 teaspoon vanilla extract
75g white chocolate, chopped
25g macadamia nuts, chopped

Preheat the oven to 180 degrees C. Cream the butter and icing sugar until pale and fluffy. In a separate bowl, sift together the flour and cocoa and then beat into the butter-sugar mixture, along with the vanilla extract. Stir in the chocolate and nuts.

Using your hands, make 14-16 walnut-sized balls from the mixture, and place them onto baking sheets covered in parchment paper. Press each one lightly with a fork and bake for 15 minutes. Cool for a couple of minutes on the baking sheets, and then transfer to wire racks to cool completely.
