I’ve been wanting to trymaking popsicles at home for a while now – I love all that is frozen, creamy and fruity – so when I had some blueberries and greek yoghurt with honey in the fridge, I decided to give these a go. This is a recipe I put together using what was there, so just feel free to add your own flavours of yoghurt or whatever fruit you have in your kitchen, as I’m sure it’ll taste just as good. These really are delicious, and were a lovely, light treat mid-morning.
This recipe filled my 8 popsicle moulds perfectly, but it’ll depend on the size of your moulds as to how many you get.
125g fresh blueberries
1 1/2 teaspoons white sugar
2 tablespoons soft scoop vanilla ice-cream
350g greek yoghurt with honey
First, put the blueberries and sugar into a food processor and blitz until as small pieces as\possible are formed.
Next, add the ice-cream and greek yoghurt until everything is mixed together and creamy.
Place the mixture equally between your moulds and replace the lids.
Freeze for at least 5 hours, or until frozen completely.
Note: If you have trouble getting the popsicles out from the moulds, then wrap a warm cloth around the mould and twist the sticks to loosen.
