
My weakness in life in cheese and crackers – I adore them, I really do. So how could I not choose one of the many, many homemade cheez-it cracker recipes that are on the web, just to chase away some of those cravings? Anything that is a homemade version of a store-bought classic is right up my street, as they usually have less of the bad stuff and taste even more delicious, so this was an easy choice for me. These are cute, moreish and totally gorgeous, especially as a snack for dinner parties or just on a weekend evening while you’re watching a movie. Just be sure to give yourself a limited portion, as I can guarantee that you will want to eat every last one. So, let’s give this one a go.
Ingredients
110g all-purpose / plain flour
60g unsalted butter, cubed
225g extra mature cheddar cheese
1/2 teaspoon salt
2 tablespoons cold water


Put the flour, butter, cheese and salt in a food processor and pulse until the mixture resembles large breadcrumbs. Then, add the water, one tablespoon at a time, while still pulsing the mixture.

Once it’s come together, wrap the dough in plastic wrap and refrigerate for half an hour.
At this point, heat the oven to 170 degrees celcius.

Roll out the dough between two sheets of plastic wrap until pretty thin. You then need to cut the dough into squares, using a toothpick to poke a hole in each square.

Then pop the squares of dough onto baking sheets lined with parchment paper and bake for approximately 16 minutes, when they were be crisp and golden. Leave to cool on a wire rack.
