Cookies are my absolute favourite thing to make. I love them in all their shapes, sizes and flavours. I love to mix them up for various occasions, as well as go back to the old classics too. So, what else would I choose to make in the run up to Valentine’s Day than heart shaped cookies? And to top it all off, these ones have the delicious chocolate-nuttiness of nutella sandwiched between them. What more could you possibly want from a Valentine’s inspired sweet treat? The basic cookie recipe is adapted from one by Sweetapolita. And they are delicious. Really. If you don’t believe me, give them a go yourself. And give them to those you love, and they’ll love you right back, just for bringing these little beauties into their life.
Nutella Filled Sandwich Cookies (makes approximately 22 cookies, 11 sandwich cookies)
Ingredients
375g plain/all-purpose flour
70g cocoa powder
1/2 teaspoon salt
230g unsalted butter, softened
200g white sugar
115g light brown sugar
87g eggs (1 egg + 1 egg white)
1 teaspoon vanilla extract
Sift together the flour, cocoa powder and salt – then set aside.
Cream the butter and sugars for approximately 5 minutes, until pale and fluffy. Beat in the eggs until just combined.
Add the flour mixture in two parts, while your mixer is on low speed, until combined and then mix in the vanilla extract.
Split the cookie dough in half, cover in plastic wrap and refrigerate for 45 minutes.
Place the dough on a board and roll out until approximately 1 cm thick and refrigerate for a further 15 minutes; meanwhile, preheat your oven to 160 degrees celcius.
Cut your cookies out using your heart cutters and place them on a baking sheet covered with parchment paper.
Freeze for 15 minutes before baking for approximately 16-18 minutes.
Cool on the baking sheet for 10 minutes before transferring the cookies to a wire rack to cool entirely.
Now, to fill:
Once the cookies are completely cool, put a teaspoon sized scoop of nutella onto the flat side of half the cookies.
Sandwich the rest of the cookies on top of the nutella covered cookies and squeeze together lightly to adhere together.
Eat!
